Olive Oil

Authentic Sicilian Olive Oil at Safina

Safina’s olive oil is more than an ingredient. It is a direct connection to the family’s roots in Sicily, where the olives are grown, harvested, pressed, and bottled with care. Sourced from the Safina family property in Marausa, a small town about 10 minutes from Trapani, this olive oil reflects generations of tradition and a commitment to quality.

Some of the olives come directly from the family’s land, while the rest are sourced from nearby properties owned by family members and a trusted local presser. The result is a premium olive oil that captures the flavor, heritage, and authenticity of western Sicily.

Olive Oil with Certified Sicilian Origin

All of Safina’s olive oil is certified IGP (Indicazione Geografica Protetta, or Protected Geographical Indication). This certification confirms that the olive oil is locally grown, harvested, and processed within its designated area of origin.

For customers who value authenticity, this matters. IGP certification helps ensure the oil is truly tied to the land, the region, and the production methods that make Sicilian olive oil so distinctive.

Cold-Pressed, First Press, and Hand-Picked

Safina’s olive oil is made using a careful process that puts quality first.

Hand-Picked Olives

The olives are hand-picked, with no machinery used on the family property. This traditional harvesting method helps protect the fruit and supports careful selection during harvest.

First Press Only

Only the first press is used, helping preserve the purity, flavor, and natural character of the olives.

Cold-Pressed

The oil is also cold-pressed, a process that helps maintain the integrity of the olives and supports a fresher, more vibrant final product.

Processed at Oleificio Basirico

After harvest, the olives are processed at Oleificio Basirico, a state-of-the-art facility trusted by the family. This modern pressing process combines advanced production standards with the traditional values behind Sicilian olive oil making.

From the grove to the bottle, every step is handled with attention to origin, consistency, and quality.

From Sicily to Safina

Safina’s olive oil begins in the olive groves of Trapani and carries the story of the family’s Sicilian heritage all the way to Milwaukee. From the trees and harvest to the pressing and bottling, this olive oil represents the same values that shape the restaurant itself: authenticity, craftsmanship, and pride in tradition.

It is a product that reflects where the family comes from and what they continue to share with guests through their food and hospitality.
